process

  1. crack eggs directly into a cold non-stick pan.
  2. add a knob of butter.
  3. turn heat to medium-high.
  4. stir continuously with a spatula. don't stop.
  5. take off heat occasionally to control temp. on heat, off heat.
  6. when curds form but still look wet/custardy, remove from heat completely.
  7. season with salt/pepper now (not before).
