ingredients
process
- crack eggs directly into a cold non-stick pan.
- add a knob of butter.
- turn heat to medium-high.
- stir continuously with a spatula. don't stop.
- take off heat occasionally to control temp. on heat, off heat.
- when curds form but still look wet/custardy, remove from heat completely.
- season with salt/pepper now (not before).
